I know this is an old post but I searched for an hour myself trying to find the answer.

Plesk saves the log files in the statistics directory under each domain. To delete them when log files are greyed out in the Control Panel run the command below:

rm /var/www/vhosts/{yourdomain.com}/statistics/error_log

Thanks for the information. It'll probably help someone else. If nothing else, I've learned something.

While running that line is good and will remove the files, you will want to recreate the error_log file or else when Apache is restarted it will choke. So you might want to consider running the following instead:

rm -rf /var/www/vhosts/domain.com/statistics/logs/*
touch access_log error_log xferlog_regular

This way you're recreating blank log files so that Apache can write to them and the Apache configuration is OK.
